Ingredients:
4 1/2 cups shredded carrots
1 (8oz) can or 2/3 cups crushed, unstrained pineapple
3/4 cup raisins
1/2 cup mayonnaise ( I subbed Greek Yogurt)
1/2 cup and 2 tablespoons sugar ( this was WAY to much sugar for me, I added honey to taste)
1 1/4 tablespoons fresh, unstrained lemon juice (no seeds)
Directions:
1, Shred carrots add to a medium sized bowl
2. Add pineapple, raisins, Greek yogurt, sweetener to taste and lemon juice to taste.
3. Mix well. Place bowl in refrigerator before serving.

It’s been the better part of a decade since the Carrot & Raisin Salad graced Chick-fil-A menus, but fans of the chicken chain continue to mourn the loss of the beloved side.
Sounds good Linda. My grandkids love Chik-fil-A. They change the menu so often. Good thing we can still find our favorites to make ourselves.
ReplyDeleteYou know me, I love sweet stuff but that had WAY to much sugar. I didn't add much honey, didn't need it The pineapple sweetened it up, My Meyer lemons are also on the sweet side. I really liked this and will make it again.
