Beautyberry Jelly

 




Ingredients:

1 quart beautyberry shrub berries ( 4 cups in a quart)

1 packet Sure Jell Pectin

3 cups sugar

pat of butter


Directions:

Wash and dry berries.

Place berries in a heavy saucepan and cover with water.

Bring to a boil and then simmer on low to medium heat for 20 minutes.

Strain berries from liquid.

Once the liquid from the beautyberry is boiling, pour in your packet of pectin and whisk till it’s all dissolved then bring to a rolling boil (*a rolling boil is one that doesn’t stop when stirred).  Whisk in your sugar until it’s dissolved and bring to a rolling boil again for exactly one minute then remove from heat. You have to really watch it because it wants to boil over into a pink sticky foamy mess. Add a tiny piece of butter and stir. This will dissolve the scum almost instantly. 

Pour into clean sterilized jars. Let sit for 24 hours or move to a canning bath container for a longer shelf life.

Place in the refrigerator. Last for about one month.

    1. I didn't water bath this thus it has to go in the fridge. As you know my arms are not strong enough to lift the heavy pot of water, one of the reasons I don't do much canning anymore.

      This has a taste of cinnamon.
