Mary Louise Blue Ribbon Blueberry Muffins
Ingredients:
1 egg
1/2 cup sugar
1 1/4 cups flour
2 teaspoons baking powder
3/4 teaspoon salt
1/2 cup milk
3 tablespoons butter- melted
1 cup fresh blueberries
TOPPING:
1 tablespoon butter- melted
2 tablespoon sugar
Directions:
In a mixing bowl beat egg and sugar until thick.
In a separate bowl combine flour, baking powder and salt.
Alternately add flour and milk to egg mixture. Beat after each addition until blended.
Stir in melted butter.
Fold in blueberries.
Pour batter into a greased and floured 8 inch square baking pan. Sprinkle with 2 tablespoons of sugar.
Preheat oven to 350 degrees. Bake for 35 minutes or until top springs back when lightly touched. Brush top with remaining butter.

Oh......Linda is blueberry baking. And you need to pick more berries. Wow, you must be on a roll. These look yummy.

ReplyDeleteLinda, I'm about to make these muffins, but there's no listing of eggs in the ingredients, just to mix egg (one?) with the sugar. Help!

I used one egg. You can use a 8 inch square baking pan. I like making the muffins cause it's easy to give to others.
It didn't make a dozen- I got about 8 to 9. Depends on how much you fill them.
