Pineapple Carrot Salsa




Ingredients:

1 can of pineapple rings or 1 fresh pineapple, cut into chunks
2 tsp of sesame oil 
1/2 tsp of red pepper flakes 
1 sweet onion, sliced 1 inch thick
1 jalapeno pepper, seeded and halved
1/2 cup of carrots, chopped 
2 tbsp of red pepper, diced 
2 tbsp of fresh lime juice 
1 tbsp of cider vinegar 
1 tsp of ginger, fresh and grated

Directions:

Combine sesame oil,lime juice and cider vinegar.

Add liquid to the above ingredients and incorporate.

Server with chips or as a side dish.

  1. Now this is really a different type of salsa. I like pineapple salsa and this one is different than the ones made with tomatoes. This one is going to be on my to make list.
