Chef Dee Lavigne's Lemon Bars







Ingredients:

Crust:

½ cup (1 stick) Butter            

1 cup Flour

1/4 cup powdered sugar 

Filling:

2 eggs, slightly beaten                                   ½ tsp. baking powder

2 Tbsp. lemon Juice                                         2 tsp. lemon zest

1 cup sugar                                                         2 Tbsp. flour


Directions:

Combine crust ingredients and cut fine with a pastry blender. Pour into a 9” square pan. Press on the bottom of the pan and spread flat all over. Bake at 350* for 15 minutes. This should not be brown.

Mix all filling ingredients and pour over the cooled baked crust. Bake in 350* oven for 25 minutes. Cool to room temperature and Sprinkle the top lightly with powdered sugar and cut into bars or squares.

I wanted to make these for Marie and Ted for Easter.
