Christmas Chocolate Chip Pudding Cookies






I made THESE in 2013.  The recipe was from the Taste of Home recipe board.

There was a bag of holiday chips in the freezer. I wanted to make cookies. Gabe doesn't like sweets and I love to bake. What do I do with the cookies?

Last year the activities director at the Life Enrichment Center had a Christmas party for the seniors and I baked for them but sadly no party this year.

I have an idea who to give the cookies to this year- check back and see if it worked out.

Ingredients:

2 1/4 cup of all purpose flour
1 teaspoon baking soda
1 cup butter - softened
1/4 cup sugar
3/4 cup light brown sugar
4 ( yes 4 ) teaspoons vanilla
1 3.4 ounce package vanilla instant pudding
2 eggs
1 12 ounce package holiday chips

directions:

Preheat oven to 375 degrees

Mix flour and baking soda in a medium size bowl and whisk until well blended. Set aside.

Add butter, sugars, vanilla and pudding in a large bowl and mix with an electric mixer. Beat until smooth and creamy.

Add the eggs on at a time and gradually add the flour ( see note below on this).

Add chips to the mixture. Batter will be stiff.

At this point you can put the dough to the refrigerator for 30-45 minutes or you can start adding to your cookie sheets.

Drop by rounded teaspoon or if you are as lucky as I am to have a cookie scoop- you will have well rounded cookies to an ungreased cookie sheet.

Bake 8-10 minutes in your preheated 375 degree oven.

Note: I let the eggs come to room temp. before I add them to a recipe. 

Had to chuckle about the cookie on the right. Looks like a face to me- what do you think? It sure wasn't planned!

  1. OM Goodness, I can't believe I didn't see this yesterday. So glad I am seeing this now. These look amazing. I agree the one looks like a face. Whoever gets these cookies will be a lucky one. Never thought of adding pudding to a cookie, but they work for cakes so why not. I don't do much baking any more or at all, but I just might have to try this one. Yum !!!!!

  2. Linda do you still have your Lady Friend you always brought cookies to ..I haven't heard you mention her since you got back to Florida I know she would love these cookies. And yes you have a face on that cookie..Myra like you I don't bake like I used to either. My Sweet Lady Friend across the street is gone now..I have know one to bring them too. Larry is borderline Diabetic and I don't dare give him all the sweets....I am full blown Diabetic and I don't need to make mine worse..But they sure look good..

    1. I really forgot about them Carol and guess what - I found another bag. Yes, I made another batch and got another "face" on one. Wonder what that means!!
