Pickled, Spicy Carrot Sticks






 I'm  cutting out recipes I want to save. I found this one in a November 1994 Woman's Day. 

Ingredients:

1-1/2 cups white vinegar
1-1/2 cups water
1 cup sugar
2 Tbs. mustard seed
1 tsp. celery seed
1/2 tsp. crushed red pepper
4 small (1-1/2") bay leaves
2 lbs. carrots, peeled and cut in thin sticks (slightly shorter than
the storage jars)

Directions:

Bring all ingredients to a boil in a large pot. Reduce heat, cover and
simmer 6 to 7 minutes, until carrots are crisp-tender. When cool
enough to handle, arrange carrots upright in two 1-pint jars. Place 1
of the bay leaves in each jar. Pour liquid over vegetables to cover.
Loosely cover jars and refrigerate. When cold, tighten lids and keep
refrigerated.

    1. The only thing that takes time with this recipe is cutting up the carrots.

      No room in Florida, I could bring them down and give them away but then I have to pack & move them. Who knows if anyone would even want them

  6. What a great idea! You know me and those old magazines..and what I've been doing. There are SO many hidden gems in those.

    Geez am I hate to the party this week-dang garden has kept me BUSY between weeding and fertilizing. Worth it though-lookin' good out there!

  7. These old magazine recipes were good than and now! I have the a huge file of all those old recipes. This is a great idea to go through them for a review and reminder of why I am a foodie!

    1. I planted carrots in my garden this winter and they didn't do well, I think the soil is to heavy but I'm going to try again. Love fresh carrots and unfortunately I don't have a decent farmers market near us.
