Rosemary Cloud Bread- NO Carbs!



I've had my eye on this recipe for awhile. It's from Body Rebooted. I'm trying to eat healthy so this fits into my new lifestyle.

My little rosemary plant which traveled from NY to this location is thriving. I was shocked when we arrived in October to see how much it had grown! Fresh rosemary at my fingertips.

I had dried in the cabinet but wanted to snip the fresh rosemary and dry it in the oven. Rinse the rosemary well in cold water to remove any remaining dirt or debris. Pat dry with paper towel or use a salad spinner to remove moisture. Pick off any withered leaves or woody stems.

Place the leaves on a large cookie sheet and bake for 2 hours in a 200  degree  oven. Give it a toss after an hour. 


Remove cookie sheet from oven and allow to cool. Crush the leaves. I stored leftover leaves in  small clean jar.

Ingredients:

3 large eggs- separated

1/4 teaspoon Cream of Tarter

3 tablespoon cream cheese 

1 teaspoon honey


dried rosemary

Directions:

Preheat oven to 300 degrees F

Line cookie sheets with parchment paper.

Separate the eggs. Place yolks in a medium size bowl, whites in a larger bowl.

Mix the 3 yolks, cream cheese, honey until well blended.

Add cream of tarter to the egg whites and beat until stiff peaks form.

Gently fold yolk mixture into the egg whites. I used a tablespoon to drop the combined mixture onto the prepared cookie sheet.

Sprinkle crushed rosemary on top.


Bake for 25 minutes. 

Remove from oven and allow to cool. 

Note: This are as light as a cloud and really, really good. I stored them in a container with a lid in the fridge. They didn't last long :-)

  1. I just saw this recipe somewhere else. Might have been on FB. I didn't read it, tho I did read this one. It sounds like it has lots of egg taste to it. I am not a fan of eggs, so not sure if this would be for me. It looks so pretty and you are just so talented with the rosemary drying. I know fresh herbs are so much more flavorful, but I will stick to my dried. I don't use much of anything anymore. My days of cooking have gone away. I do love reading your posts, they are so interesting.

  2. I stick to a pretty healthy diet, except for bread. And more bread. I really like bread, lol. I'm willing to give this a try! Now, if only I could get a rosemary bush to survive. :)

    1. We had a heavy frost last week in Northern Florida. With temps in the 20's I was shocked that the Rosemary survived!

  3. You know, I've been SO tempted to try these....now that I know you have, I'm gonna give them a whirl. I planted rosemary a couple years ago and it did NOTHING. I don't know what the heck I did wrong. I love my fresh cut herbs and miss them during the winter. I wish I had a nice sunny window, I'd load it up with small pots of parsley, basil and a few other herbs so I could use fresh all year long. I do buy Italian parsley and cilantro fresh because those are the herbs I use most. I froze my basil from the garden...good to drop in a pot of spaghetti sauce or soup.

    1. Gayne- I don't see why not. Italian seasoning I bet would be really good.

      Do you have fresh rosemary in your yard? I think the fresh dried is so much better tasting then the stuff in the jar. It's just my opinion but as long as I can grow fresh I'll dry it.
