Carrie Underwood's-Pumpkin Chocolate Pudding






Did you know I love a good sale?  Pumpkin ( a brand name) was on sale for 89 cents a can! Think I could pass that by? No way!

Now I'm stocked up on pumpkin. I was flipping through my library issue of People magazine and saw this recipe.

Carrie Underwood supposedly craved this pudding throughout her pregnancy. She shared a few recipes in the 12/7/15 issue and I wanted to give it a try. I adapted it slightly. 

Ingredients:

2 Tbsp. unsweetened cocoa powder

1/4 cup vanilla almond milk

1 15 ounce can pumpkin puree 

2 Tbsp. pure maple syrup

1/2 tsp. vanilla extract

1/2 tsp caramel extract ( my addition)

1/2 tsp ground cinnamon ( used Saigon )

1/4 cup chocolate protein powder ( didn't use)

Directions:

 In a medium size bowl add cocoa 

Add the almond milk; whisk until thoroughly  blended

Add pumpkin puree and whisk until smooth

Whisk in maple syrup, vanilla, cinnamon and caramel until blended

Spoon into serving dishes

Serve immediately or cover and chill up to one day.

Makes 5 (1/2) cup  servings

  1. I remember thinking pumpkin and chocolate was a strange combination.....good thing I didn't let that stop me from trying it.....it's a winner. I've never tried any of the protein powders...I see them in a lot of recipes these days. Love how easy this goes together too.

  3. How could I have missed this one. My favorite Pumpkin can. I must try this one. Chocolate in any form has to be good, and with the pumpkin, it has to be a winner. Good thing I checked in and saw what I missed.
