Mango Gazpacho
Another recipe to beat the heat of the summer. Found this recipe on I don't go to the gym. The photo on their page of the gazpacho is really good. I didn't top with mango, jalapeno and cilantro, the soup is delicious .
The only thing I changed was the fresh tomatoes. I added a can of diced tomatoes with chilies.
Ingredients:
2 mango's- peeled and cut into chunks
1 14.5 ounce can diced tomatoes with chili- drained
1 cucumber- peeled, seeded and cut into 1/2 inch pieces
1 green bell pepper- washed, seeded and diced
2 garlic cloves- diced
3 tbsp diced red onion
1 cup of low sodium tomato juice
Jalapeno to garnish
Salt & pepper to season
Directions:
Place in a blender or food processor drained tomatoes, cucumber, mango , green pepper, garlic, red onion- pulse a few times.
Add tomato juice and pulse again till the gazpacho is the consistency you desire.
Season with salt and pepper to taste.
Refrigerate for at least 30 minutes to chill & let the flavors combine.
Add remaining diced mango & slice jalapeno to garnish.

Boy is that pretty-and pretty tasty too I'll bet. And EASY! I've never made or had a cold soup before. I bet it really hits the spot on a hot summer day. Wonder if I could get Bob to give cold soup a try? He's kind of a stick in the mud with some things. :)

DeleteLike Carol, I've never had cold soup. Too, I have a fuss pot who isn't willing to try anything different. I think it would be delicious & I'd certainly like try it.

I love gazpacho. I cooked it just recently, but followed the traditional recipe. Your recipe has a nice twist. I bet it's delicious.

We love gazpacho! And mangoes too! So I'm thinking we'll definitely enjoy this mango gazpacho. We could definitely use a cool soup with this (still) hot weather. :) Thanks for stopping by and sharing this recipe on Five Friday Finds!
