Cucumber- Mandarin Orange Salsa







I noticed a few too many cans of mandarin oranges on the shelf in the pantry.Think I can remember what I bought them for?  No.

Now what am I going to use them in? I knew I could come up with something.

This was really good!


Ingredients:

1 cucumber - peeled , chopped, seeded and cut into 1/2 inch pieces

1  11 ounce  can mandarin oranges-drained

1/4 cup red onion- finely chopped

1/2 of a red pepper- washed and cut up ( you could use more but I needed the other half for another recipe)

1/8 tsp red pepper flakes ( you can add more if you prefer)

Juice from 1/2 a lime

1/4 tsp. dried cilantro 

salt- to taste

Directions:

Combine the cucumber, mandarin oranges, red onion, red pepper, red pepper flakes, lime juice and cilantro in a medium size bowl.    Sprinkle with  salt to taste, then toss to combine.

  1. Linda... you're NOT ALONE in that "WHY do I have so many cans of?" boat.....I do the SAME thing. That salsa is so pretty! And I bet delicious too. I love fruit based salsas.

    Now...can anyone tell me why I have SO MANY CANS of evaporated milk? Sigh............

  2. Were in the same boat. I have so much I can't remember either. I used to set recipes aside just for that reason. I'm going to have to remember why I picked up so many cans of evaporated milk. Oh well, in case of emergency I have milk. The salsa looks wonderful
    & it photographs beautifully.

  4. This looks so refreshing. Beautiful colors and really light tasting I bet. I don't stock up the way I used to, but there were times I used to have so many cans of diced tomatoes I didn't know why. I do have evaporated milk also....
