Cucumber Mango Salad


Once we move to Florida cucumbers are going to be growing in my garden.

The recipe is from Sweet & Savory by Shinee.

This is delicious. I didn't use the dill paste, and I loved using my hot chili oil.

Dug out one of my toys and used it to julienne the cucumber.

I made this twice, with the cilantro and without. Liked both. 

Ingredients:

1 large cucumber
1 mango
1/4 cup chopped fresh cilantro

For the dressing:

2 tablespoons lemon juice
2 tablespoons soy sauce
1 tablespoon honey
1 teaspoon hot chili oil
1/2 teaspoon sesame oil


Directions:

Wash and peel the cucumber and mango and cut into julienne strips, add to a medium size bowl.

Cut the cilantro ( I used scissors) and add to the bowl with the mango and cucumber.

Whisk the lemon juice, soy sauce, honey, hot chili oil and the sesame oil in a small bowl until thoroughly mixed. 

Add the dressing to the cucumbers and mango and cilantro and marinate for at least 2 hours.

  1. I took a peek yesterday and I have a slew of little cucumbers starting....HOPEFULLY they'll keep growing and I'll have a bounty of them....then I can give this a try.

  3. Do you not grow cucumbers on Long Island because the deer eat EVERYTHING in your yard... like me!?!? SO upsetting. :( Lucky you can grow them in Florida! BTW- Your julienned cucumbers give the salad a nice presentation. :)

    1. OH they sure do! They ate my rhododendron, not just the leaves, the whole thing! Daffodils? They never ate them and now- gone. I have to block off the walkway to the deck otherwise they come up and eat any indoor plant that I have out .
