Irish Potato Soup







This soup is from MyRecipes, It was noted that this recipe is from McGuires Irish Pub, Pensacola, FL.,
MARCH 1999



Ingredients:

1/2 cup unsalted butter
1 medium onion - finely chopped
3 leeks- sliced
3 large baking potatoes- peeled and cut into 1/4 inch chunks
3 ( 14 1/2 ounce) cans chicken broth( used 5 1/4 cups homemade broth)
1 teaspoon salt
1/4 teaspoon pepper

Toppings- cheese, bacon, chopped fresh chives

Directions:

In a large saucepan melt butter.

Add onion  ( I used the food processor to chop it) and leeks to the saucepan.

Cover and cook for 20 minutes, stirring occasionally.

Add in the potatoes to the onion/leek mixture and cook an additional 15 minutes.

Stir in the broth and the salt and pepper and bring to a boil.  Reduce the heat and simmer for 30 minutes.

Use a blender or hand held Immersion Blender and mix until smooth. Garnish with any topping you enjoy.

 Irish Soda Bread would be great with this soup!

  1. I would love a bowl of that for lunch.....Bob likes to see "stuff" in his soups..geez. Maybe he'd be OK if there was enough "topping"....it sure looks good.

    1. Thanks Carol. It was the only sort of green bowl I could use. Went over to the flea market and couldn't find the prefect emerald green dish and bowl so i just made due.

      You know that Gabe loves his potatoes!

  2. This looks so good. I had to laugh at Carol's "Bob likes to see "stuff" in his soups". I am the complete opposite, I like plain soups....I enjoy putting my own "stuff" in, so this looks like a winner for me. Yum, you made me hungry. Going to put potatoes on my shopping list. I envy all you cooks, you seem to have ingredients on hand.....me, I have just what I need. Guess cause it is just me. Thanks for sharing this Linda, going to have to share this one.

    1. Myra- Gabe loves his potatoes as you know and I had a 5 pound bag I need to use. Potatoes don't keep down here, it's to warm.

  5. I love soup. Only problem is that it's 92° outside right now. Going to copy this one off. I have 3 whole days to myself this week & plan on making stuff I like so I don't have to hear "what's that?" I'm going to enjoy this soup.

    1. no, it was smooth and delicious. You can always add a little more broth if you think it's gritty.
