Orange & Lemon Wafer Cookies




The reason I found this recipe was an hour and half wait for a doctor. I asked for some magazines and she brought me a 2013 December TOH.

The recipe was submitted by Patricia Swart from Galloway New Jersey.

Ingredients:

1/2 cup unsalted butter- softened
3/4 cup sugar
1 egg
2 tsp.grated orange peel
1 tsp. grated lemon peel
1 tsp. vanilla extract ( used lemon extract)
1 tsp. orange extract
1 cup all-purpose flour
5 tsp. cornstarch
1/4 tsp. baking soda
1/4 tsp. salt

(optional to add orange or lemon peel strips)

Directions:

Preheat oven to 350 degrees.

In a large mixing bowl cream the butter and sugar until light and fluffy.

Beat in the egg, orange and lemons peels and the lemon ( which I subbed) and orange extracts and mix well until combined.

In another bowl mix the flour, cornstarch, baking soda and salt.

Gradually add the flour mixture to the creamed mixture and mix until all the flour is added. 

Drop by rounded teaspoon on a cookie sheet lined with parchment paper.

Bake for 6-8 minutes or until edges are golden brown.

Remove and cool on a wire rack.

  1. A 2 thumbs up review from Leda convinced me! I'll be sure and check to see if I have this recipe listed in the binder that I have all the "I want to try this recipe" listed from my Taste of Home magazines....yep, I have every one of them from the very first issue-all filed in a file cabinet and I still use them a lot. Especially the older issues...they have more recipes in them that are the kind of cooking and baking I do.....not a lot of pre-made, pre packaged stuff. It's just the way I prefer cooking now.

    I love love love that blue plate Linda.....blue and yellow look SO pretty together.

    Think if I ask nicely that Leda would share a cookie? :)

  2. Who can resist citrus? I sure can't. I lean more to cookies than cake or cupcakes anymore. I love a good cookie recipe. I also like that you added more flavor with the extracts. Thanks for the reviews Linda & Leda.

  3. I agree with Carol........the blue plate is so pretty. It makes those yummy looking cookies jump out at you. I am also with Cyndy.....who can resist citrus. Lately I have been on a lemon kick. Everything lemon is my downfall.

    I also used to get T of H magazine. I saved all of them, but when I moved I had to get rid of them. I went through and saved my favs. I still use the mini meatloaf one everyone loved. I make them and freeze them for me. So good..

    Thank you L and L or the 2 L's for this yummy looking cookie. I am sure to try it when I get in the baking mood.

  12. Good Afternoon Linda, I have popped over to visit you after reading about your delicious orange and lemon cookies over at Miz Helen's blog. I love the zingy taste of lemons and the orange will be such a lovely mix of flavours. I am certainly going to be trying this recipe.

      I hope you enjoy the cookies as much as my 96 year old neighbor did! I love to bake and always making new recipes to share with her and she absolutely love these.

      Thank you for following me. Hum.. not sure where I got that plate. I go to a flea market on the weekends when we are in Florida and I think I found it there for 50 cents. I only like to spend up to a dollar on plates and when I saw the blue one I knew it would be great for photo shots.

      I was on your site and saw a lentil Shepard pie I want to make. Lentils are one of my favorites and I have some red lentils left.

      BTW- my grandmothers name was Daphne and she was born in England. She came to the US when she was a young girl. She never lost her British accent. My other grandmother was from Brooklyn NY and she had a heavy city accent.
