Cauliflower Carrot Herb Mash
I love cauliflower and I happen to have some left and planned to make another recipe but after reading the directions it was suppose to be fried.We have a fryer at home in NY,and I wasn't in the mood to experiment how it would come out baked. I went into my saved recipes and saw this from multiply delicious.
1 head of cauliflower, washed, and cut into florets
3 to 4 small to medium carrots, peeled and chopped
1 sweet onion, chopped (used a yellow onion)
2 cloves garlic, minced
1 tablespoon fresh rosemary, minced
1 tablespoon fresh thyme, minced ( didn't use)
2 tablespoons olive oil
salt and pepper to taste ( didn't use)
In a large pot place a steamer basket
Place the peeled carrots and the washed cauliflower in the basket and cook over medium- high heat for about 10-12 minutes or until the cauliflower and carrots are folk tender.
In a medium size skillet heat 1 tablespoon olive oil.
Place the onion, garlic and herbs and saute the onion until it is translucent.
Remove the cauliflower and carrots from the steamer basket and add to a food processor. Add the onion and garlic and herbs from the skillet to the food processor .
Pulse all the ingredients in the food processor until smooth.
Garnish with fresh thyme or fresh rosemary and serve.
P.S. Since Gabe wouldn't eat this I had leftovers. Recipe coming soon- my idea on how to use the mash in a creative way!
