Low Carb Flax Crackers
This was the first time I made crackers. Mary loves them and I wanted to send her something special for her birthday. I found the recipe on My Life Cookbook.
Ingredients:
1/2 cup ground flaxseed
1/2 cup ground almonds ( used my food processor to get the 1/2 cup from whole almonds)
1 cup grated sharp cheese ( used fresh Parmesan)
2 eggs
1 teaspoon crushed garlic
1 teaspoon Italian spices
1 teaspoon sea salt ( didn't use)
Directions:
Preheat oven to 350 degrees
Beat the eggs with a fork in a medium size bowl and add the rest of the ingredients. Mix well and form the dough.
Line cookie sheet with parchment paper.
Lay dough on top of a sheet of parchment paper and put another sheet of parchment paper (which you have sprayed both sheets with cooking spray) on top of the dough. Using a rolling pin, roll out the dough to as thin as possible. Cut the dough with a butter knife carefully into the size desired.
Remove the cut out crackers from the parchment paper to the the cookie sheet.
Bake at 350 degrees for 10 minutes and then flip each cookie over gently.
Bake an additional 10 minutes till they start to brown.
They will brown around the edges first.
Remove from the oven and allow to cool.
Store in a air tight container.

I've seen so many recipes for homemade crackers and have never tried making them. Yours came out great, Linda. I bet Mary's gonna be one happy lady when she gets her special gift in the mail! :)

DeleteNow this is something really different. They look so good. I bet Mary will LOVE them. They have so many good ingredients in them, and I might just have to buy the things I need and make them soon. Only problem is I don't know where my rolling pin is. You can tell I am a real Baker, Not. Thanks for sharing this one Linda, sounds so interesting.

DeleteI have seen the flax seed in the store in a jar. I never made anything with them. This will be worth trying.

Myra, you could use a wine bottle or the likes instead of the rolling pin! :-)
I think i did low carb for a few weeks- as you can tell by my recipes I didn't stick to it!

I've been meaning on making flax crackers for a while now. Might try substituting a portion of the flax with other seeds like sesame, pumpkin or chia.

I love the idea of rolling out the dough between two sheets of parchment to get them nice and flat. These sound delicious.

I've never tried making crackers--that really intimidates me! Though this doesn't seem hard t all. I like using flax and almonds as the "flour." Thanks for sharing, Linda!

DeleteI made these for a friend who told me NOT to send her cookies. It was her birthday and last year I sent her a small cake. She told me she was on a diet and I knew how much she loves crackers so I figured I would give them a shot.
They were good and she liked them so it turned out to be a good birthday gift.
