We didn't have to travel far to party New Years Eve. Our neighbors across the street had a party and I took this.
Since the recipe contained black eye peas figured it would bring everyone a bit of luck.
Ingredients:
10 oz frozen corn, cooked and drained
1 can black beans, drained and rinsed
1 can black eyed peas, drained and rinsed
1/2 cup red bell pepper, diced
1/2 cup green bell pepper, diced
1 cup chopped celery
3/4 cup chopped green onion
1 cup chopped white onion
3/4 cup apple cider vinegar
3/4 cup olive oil
1 cup sugar
Salt and pepper
Directions:
1. Mix together everything in a large bowl except the oil, vinegar and sugar.
2. Add the vinegar, oil and sugar to a medium saucepan and bring it to a boil. Remove from heat and let it cool.
3. Add cooled oil/vinegar mixture to the chopped veggies, stir and make sure everything is well coated
4. Cover and refrigerate overnight.
Serve with scoop-able chips.

I bet this was a big hit. Sounds something like another recipe I made once. I will have to copy this one, since it has all the ingredients I like. Hope you had a nice time. Henry looks very handsome....reminds me of a movie star.

DeleteI bet that dip disappeared in no time at all at the party! I love dips like that....and "Scoops" are perfect for it too.....they hold a nice bundle of goodies.
ReplyDeleteWhat a fun way to ring in the New Year....it was nice and quiet here-just the way I like it. I managed to see the ball drop in Times Square while Bob was snoring on the couch. We're still trying to figure out where 2014 went-it sure did go by fast.
