Black Bean and Corn Salsa (Aka Texas Caviar)

We didn't have to travel far to party New Years Eve. Our neighbors across the street had a party and I took this.

Since the recipe contained black eye peas figured it would bring everyone a bit of luck.

10 oz frozen corn, cooked and drained
1 can black beans, drained and rinsed
1 can black eyed peas, drained and rinsed
1/2 cup red bell pepper, diced
1/2 cup green bell pepper, diced
1 cup chopped celery
3/4 cup chopped green onion
1 cup chopped white onion
3/4 cup apple cider vinegar
3/4 cup olive oil
1 cup sugar
Salt and pepper

1.  Mix together everything in a large bowl except the oil, vinegar and sugar.

2. Add the vinegar, oil and sugar to a medium saucepan and bring it to a boil.  Remove from heat and let it cool.

3. Add cooled oil/vinegar mixture to the chopped veggies, stir and make sure everything is well coated

4. Cover and refrigerate overnight.

Serve with scoop-able chips.

                                                         Henry,our neighbor and host

  1. I bet this was a big hit. Sounds something like another recipe I made once. I will have to copy this one, since it has all the ingredients I like. Hope you had a nice time. Henry looks very handsome....reminds me of a movie star.

Happy New Year to everyone. Hoping this year is a great one for all of us.

    1. Henry and his boys had the same outfits! They looked great.

  2. Happy New Years everyone. Linda, Henry looks mighty spiffy! I bet you had a great time.

Very quiet evening here. Saw the new year in by myself with my nose in a book! So much for partying it up! LOL

    1. SO- what are you reading? You know I'm always looking for a good book

  3. Henry sure does look dapper in his suit. Hope you had fun last night. The recipe sure looks good. Hope you had a great time. I agree Myra, my new years wish is for all animals to have a safe home and loving envirionment and everyone here a wonderful and prosperous and happy new year. Love ya ladies!

    1. One of the dogs I walk at the shelter was adopted! It wasn't Buck but one found it's forever home.

    2. That warms my heart. I wish I could take Buck

  4. I like all of the ingredients so I will try to make this. Hope you had a wonderful time.

    1. I was going to add some jalapeno but held off because I wasn't sure if other people would like it.

  5. I bet that dip disappeared in no time at all at the party! I love dips like that....and "Scoops" are perfect for it too.....they hold a nice bundle of goodies.

What a fun way to ring in the New was nice and quiet here-just the way I like it. I managed to see the ball drop in Times Square while Bob was snoring on the couch. We're still trying to figure out where 2014 went-it sure did go by fast.

Have a Happy and Healthy 2015 everyone! :)

    1. Gabe and I sure liked it and it's on the to make again list

  6. This looks soooo good. I'm trying this one.

  7. This looks like a healthy recipe and a good one to use the Black eyed peas I dont care for but would be great in a dish like this. Thanks for sharing on Oh My Heartsie Girl Friday Feature this week.
