Buffalo Chicken or Turkey Wing Soup

Recipe adapted from Ann's Entitled Life.

It gets cold in Florida and nothing taste as good as a hot bowl of soup.

Lots of leftover turkey, plenty to make the broth and meat to add to the soup.

The soup I brought to Leta's didn't have any hot sauce. She had a very bad cold and soup always hits the spot when you aren't feeling well.

Ingredients:

12 Green Onions, sliced lengthwise and then sliced thin
6 Celery Stalks, sliced lengthwise and then sliced thin
3/4 cup Unsalted Butter
1/2 cup Flour
3 cups Milk
3 cups Low Sodium Chicken Broth
4 cups Chicken or Turkey, cooked and diced
3/4 cup Frank’s Hot Sauce
16 oz Cream Cheese, cubed
1 tsp Cayenne Pepper
1 tsp Onion Powder

1 tsp Garlic Powder

Directions:

In a large pot over medium heat, melt the  butter and then saute onions and celery until soft.

Slowly stir in flour until smooth.

Add the milk a little at a time and then the broth, stirring constantly until smooth.

Add remaining ingredients, and simmer stirring regularly until cream cheese is melted.

Season to taste. Add more Cayenne Pepper if you want more heat.

Simmer until thoroughly heated through, and hot.

  1. So nice to see Leta smiling and eating a bowl of your yummy soup. Bet this was better than any medication she had taken. What a beautiful lady she is. I hope she is feeling much better now.

This soup sounds wonderful. I am not a soup person, but this sounds like something I might enjoy. The only problem is it has lots of milk and cheese, so I would have to use low fat or non fat.

Happy eating Leta, and here's to many more HEALTHY days.

  3. That looks so good my mouth is watering. I made turkey soup after Thanksgiving and was winging it as usual and put about a cup of lentils into the soup. I really like this addition.

  5. Leta looks awesome in blue. What a pretty lady!! This soup looks awesome. It is in the upper 40's tonight and this soup would really warm me up. Will be trying soon. My stepson is deep frying a turkey on New Year's Day so we should have some leftover turkey to make this soup. Thank you for the recipe. Carol San Diego

    1. Cyndy- the virus that hit her she had to go on a double round of antibiotics. She had to get a chest xray and had to wait 4 hours till they got her in. Something very wrong with that.
