The boys back in NY love anything that has lemon in it. I love baking for them and I made Rita and her sister a loaf.
Rita's sister Grace recently lost a lot of weight. She said she only wanted a bite. Rita said she was the one who got a tiny bite! Grace ate the whole loaf.
recipe from Wine and Glue
Ingredients:
2 cups all purpose flour
1 tsp baking soda
1 cup granulated sugar
1 3.4 oz package of dry instant lemon pudding mix
1/2 cup of butter melted and cooled
2 eggs, whisked
1/2 TBSP lemon zest
1/4 cup lemon juice
2 teaspoons vanilla
Directions:
Preheat the oven to 350 degrees
In a large bowl mix the flour, baking soda, sugar, and pudding mix .
Whisk together the eggs, butter, lemon zest, lemon juice and vanilla in a medium bowl.
Gently fold the wet ingredients into the dry ingredients, until just combined.
Pour into a well greased loaf pan and bake for 35 to 40 or 30 minutes or until the top is golden brown. Test with a toothpick and when it comes out clean you know it's done.
Ooooo I love lemon too-and I LOVE using instant pudding in quick breads.....Linda I think you know that by the zucchini bread recipes I've come up with. This looks SO good....and that's so funny about Rita and Grace. At least you know they enjoyed it.....you'll have to make Rita another loaf when you're back in NY since she only got a little bite the last time.

Oh Carol- you know how much I love that pan! If I had it in NY I know I would of made these into muffins.

DeleteYummy, this looks so good. Going to copy this one out and make. I love the taste of Lemon, (yeah I do like some things). It is my second fav, Cyndy, but chocolate is my very fav. Going to have to try this real soon....yummy....

DeleteWish we could get those ouddings in Canada! Lemon is a favorite with most of the family. My daughter is talking about going to Grand Forks one of these weekends. In exchange for us looking after her two dogs, she can go to a grocery store and get me some puddings! Hope this works out as I'd love to make this recipe.
