Cookies for breakfast? Yes! I printed out a few recipes. Here's one I thought look good.
My cousin Dawn is visiting this week and she eats healthy. I wanted her to have some cookies to enjoy on her trip home.
Adapted this recipe.
I baked them on parchment paper.
Nonstick cooking spray ( used parchment paper)
1/2 cup mashed banana (about 1 large)
1/2 cup chunky natural peanut butter (unsalted and unsweetened) ( we like Skippy's Roasted Honey Nut Peanut Butter)
1/2 cup honey ( cut this to 1/4 cup)
1 teaspoon vanilla
1 cup rolled oats ( Quaker old fashion oats )
1/2 cup Gold Medal® whole wheat flour( didn't have wheat so used all purpose white)
1/4 cup nonfat dry milk powder
2 teaspoons ground cinnamon(Saigon cinnamon)
1/4 teaspoon baking soda
1 cup dried cranberries or raisins( used chocolate chips)
- Preheat oven to 350°F - Line cookie sheets with parchment paper and set them aside for later use.
3-Place about 3 inches apart on the cookie sheet.
4-Bake for 14-15 minutes, put one sheet in the oven at a time. You want a nice brown color.
Enjoy with a nice cup of tea or coffee.

Cookies for breakfast? Sounds like a deal to me! I bet Dawn was a happy lady getting these goodies from you. They look delicious, Linda.....how can you go wrong with peanut butter, oatmeal and chocolate? You sure can't in my book.......

Goes to show you can eat healthy and still have your treats. I am going to have a cuppa coffee with you, and think about how I am going to make these yummy treats.
