Blueberry Salsa


 I found this recipe on  Cyndy's favorite recipes. Cyndy  also offered to  share one of her delicious desserts with us. I will be posting it on Tuesday.

 The salsa makes a great summer snack. Thank you Lisa from

Blueberries have been on sale and I picked up quite a few pints and since I had a bag of tortilla chips in the house I knew this would be something healthy to nibble on.


Ingredients:

1 cup fresh blueberries, coarsely chopped
1 shallot, finely chopped ( Added red onion- suggested by Cyndy)
1 serrano chile, seeded and minced ( added 2 diced jalapenos)
1 Tablespoon fresh cilantro, chopped
1 Tablespoon lime juice
1 teaspoon fresh ginger, minced

1/4 teaspoon salt (didn't add)

Directions:

Combine ingredients in a small bowl. Put in refrigerator covered and let it sit for twenty to thirty minutes for the flavors to blend.

  1. This sounds like a really different kind of salsa. I bet it is yummy. I can't wait to see what recipe Cyndy is going to post on Tuesday. It is such fun coming here. Linda always has something different for us. It could be a recipe, or something real interesting she has found online, and my favorite day is Monday. Max makes me smile.

  2. I remember Cyndy making this............she raved about it. I haven't tried it yet but hope to this summer since Robin found a local place to pick blueberries not far from her house. You're right Linda-what a great and healthy snack.

    I'm with Myra-there's always something fun to see here. I always look forward to stopping in to see what surprise is in store. :)

  3. Hello fellow ShareFest SITStah, this recipe sounds interesting. I can't imagine blueberries with onions and jalapenos - I'm so curious I must give this recipe a try. Thanks for sharing it!

    1. Hi Marie- I love making something new and as soon as I saw this recipe I knew I had to give it a whirl. Let it sit in the fridge for awhile. It makes the flavors really shine ;-)

  5. Oh, I remember making this. The fresh ginger is what makes this so darned good. Learned my lesson the hard way and tried dry powdered ginger the first time YUUUK. I also added crushed pineapple to it once and that was good too. I'm so happy you tried this Linda and liked it. I never would of thought to use blueberries in a salsa but it worked!

    Marie, You wouldn't think that they're good together, but the mix is spot on. I use Sweet Onions for this recipe and for my mango salsa as well.

    1. Perfect lead in to your recipe on Tuesday Cyndy! I never use the ginger in a jar but agree that fresh was delicious in this.

      Never added the pineapple will have to give that a try next time.
