Chicken Alabam

We loved this recipe and I know I'll have to get another photo* because this one does NOT do this great dish justice.

The source of the recipe is Lion House Recipe Cookbook and I adapted the recipe from That's Some Good Cookin'.

I don't care for pimiento and chopped up a red pepper.

Ingredients:

8 pieces of chicken- rinsed and pat dry with a paper towel
2/3 cup all purpose flour
1 teaspoon smoked paprika
1 teaspoon salt ( didn't use due to the salt in the broth)
1/8 teaspoon freshly ground black pepper
1/8 teaspoon ground thyme
5 tablespoons butter, divided
1 cup chopped onion
1 cup chicken stock ( didn't have stock so I used canned broth)
1/2 cup half and half
1 teaspoon lemon juice

2 tablespoons diced pimiento ( used red pepper)

Directions:

Mix the flour, paprika, salt, pepper, and thyme together.  Put in large plastic bag that seals.

Add 1 or 2 pieces of chicken to the flour mixture and shake bag to coat chicken.  Shake excess flour off chicken pieces.

  Reserve the remaining flour mixture.

Place the chicken in a large lightly greased baking dish that has been sprayed with a non-stick cooking spray.

Melt 3 tablespoons of butter and baste each chicken piece with  butter.

Place chicken in a 350-degree oven and bake for 30 minutes uncovered.

While the chicken is cooking prepare the sauce. 

 Melt the remaining 2 tablespoons butter in a medium-sized saucepot.  Cook onions and peppers in the melted butter until onions are nearly translucent.

Add 2 tablespoons of the flour mixture from the remaining flour mixture into the onions and pepper.

Pour in the soup stock and cook and stir until thickened.

Add the  half and half.  Stir until smooth and add the lemon juice and continue stirring.



When chicken has baked for the first 30 minutes, remove from oven and pour sauce over chicken.  Cover the chicken and return to oven.  Bake for an additional 30 minutes.

The sauce on this chicken is delicious! I served mashed potatoes with the chicken. We usually have leftover potatoes- not with this sauce!

* I took the photo when the chicken was cold. It looks a little dried out but it's far from that. I plated it when it came out of the oven and Gabe hates when I "play" around with the food before we eat. That means - do the pictures later , lets eat!

  1. Oh boy-another great looking chicken recipe! That looks so good Linda.....I know we're gonna love it. I love Terri's blog-everything I've tried of hers has been delicious. She's a sweet lady.

    I had to laugh when you mentioned Gabe and "playing around with the food".........here? It's BOB that does that and I'm ready to chew the doors off the cabinets! I'll keep saying, ARE YOU DONE YET? I get......."Just a few more shots............hold on, 2 more photos".............20 photos later? We eat. :)

  2. Carol- this one is a MUST make. I made it in Florida and waited to post due to the photo- which is NOT good! The chicken is fantastic. I know you guys will love this one.

  4. Hey, Linda! Thanks for reminding me about this recipe. I can't believe that I have not made it again since I did the post for it. My husband was just saying a few nights ago that he wishes I would have some food re-runs now and again. I get so busy thinking about new recipes that when I do make favorite repeats, it is usually stuff that I don't have to think about like tacos or spaghetti.

    You're right. This is a good recipe! I'm so glad that you and your husband liked it! I need to make it again for dinner. John will be so excited.

    1. I kept putting off posting it. The photo is just isn't mouth watering. I didn't want to heat it up in the microwave so I just took the picture. It's so darn good and I know John is gonna love having it again.

  5. OMG, I am late getting on here today, but this recipe sounds so good. Wonder if it would taste as good with just boneless chicken breasts? I had to laugh at what Gabe says about taking the pictures.....just like a man, I wanna eat. You are lucky that Gabe likes chicken. When my husband was here, he used to say Chicken again?? Oh well. Thanks for posting this.....the sauce sounds so yummy

    1. LOL Myra! Gabe tells people he has feathers growing out of his butt from eating so much chicken! Sure , use those boneless breast- it will be something you will make again and again.

  6. I'm late getting here and I should know by now to hit preview first then hit publish, that way my post won't go off into never never land. Whatcha talkin about? This looks great and TASTE is what counts. I like all the ingredients in this recipe so I know it has flavor I would enjoy. Thanks for sharing your dinner with us. I serve the hubby first so he doesn't grumble and photograph my plate, if not, he waits or he doesn't eat.
