Salsa Black Bean Burgers Recipe






We had enough hamburger meat for one person. I didn't want to take more out of the freezer and I decided to make a burger for me too, but used black beans. 

I found this recipe on a TOH board. Black beans have always been a favorite and Gabe got to have his red meat and I did a meat free night. Worked out nicely.

Ingredients:

1 can (15 ounces) black beans, rinsed and drained
2/3 cup dry bread crumbs (used hot chipotle panko)
1 small tomato, seeded and finely chopped
1 jalapeno pepper, seeded and finely chopped
1 egg
1 teaspoon minced fresh cilantro
1 garlic clove, minced
1 tablespoon olive oil
4  hamburger buns, split


Chopped the garlic and jalapeno on the food processor and then added the beans. Pulsed a few times and then added the tomato and pulsed for another minute.

Transferred to a large bowl and added the panko, cilantro and the  egg.

Mix until combined and shape into patties. You should get 4 patties.

In a large nonstick skillet, cook patties in oil in batches over medium heat for 4-6 minutes on each side or until lightly browned. Serve on buns. Top with sour cream and guacamole if desired. Yield: 4 servings.

  1. Those really look good, Linda. You know, I've been tempted to try a bean burger but always seem to hesitate. I wonder if Bob would be willing to give it a go? He does love his regular burger-but he's also willing to try new things.

    I'll have to run this one by him and see what he thinks. How's the texture?

    1. Great texture- added a bit more panko, 2/3 cup didn't seem to be enough. Added a tad more.

  2. Hmmmmm, bean burgers, sound very interesting. I do love beans, so I think I might have to try this out. I guess it is like eating veggie burgers. I don't eat much meat at all, so this might be a welcome change.

  3. I like this idea a lot but I have never seen hot chipolte panko. We have lemon pepper and Italian but no chipolte.
