Orange Chocolate Chip Delights

I had to bake just one more time before we headed north. Ted's co-workers love cookies. They gave this cookie two thumbs up!

This was a great time to make these. I was out of many of my baking staples and I had one lonely bar of butter in the fridge. Gabe would of had a fit if I wanted to take that one bar of butter home so what better way of using it up then adding it to cookie dough.

I started a post on Taste of Home called Cook's Corner Chat and Sue posted a recipe she came up with. I adapted the recipe and changes are in blue.

Ingredients:

1 box orange cake mix (To increase a 15.25 ounce cake mix ( which this box was) add 3 ounces or 8 level tablespoons plus 1 level teaspoon of this up sizer to the cake mix)

1 stick butter, melted ( I used unsalted butter)

2 large eggs

1 tsp. pure orange extract

2 cups chocolate chips

yellow and orange sprinkles- just for fun

Directions:

Preheat oven to 350 degrees

Combine the cake mix ( I used the cookie mix- thought it was the cake and just didn't want to bring it back) the eggs, melted butter, orange extract and the chocolate chips and mix with an electric mixer. You want everything to be thoroughly combined.

Roll into one inch balls and add the sprinkles. Place on a cookie sheet which is lined with parchment paper.

Bake in the 350 degree oven for 8-10 minutes or until edges are light brown. Let them cool on the cookies sheet for about 2 minutes before removing. Place on a wire rack to cool.

I used mini chips and regular sized chocolate chips.

Gabe really liked these

  1. Great minds think alike Linda........I made these over the weekend to take to Robin's and they are delicious! I love the orange/chocolate combination. I used more extract and added fresh orange zest in the ones I made.

Never thought of adding sprinkles-they make everything fun! :)

  2. I think I am losing it.....I am glad that Carol and LInda have good minds, since I replied on here before, and I don't know what happened to it.......Anyway, I never thought of chocolate and orange as a combo, but it must work. I am going to save this one. Anything Chocolate has to be good.

    1. Myra- this is the first time I ever picked up a cookie mix. I was in a hurry, Gabe was with me and Max was in the car. I have made cookies with cake mixes and they come out great. In this recipe honestly I could not tell it was from a cookie mix. The added orange extract made the difference.
If you have any more questions just let me know.

  4. I have made cookies from cake mixes and they are great. They are so chewy and yummy. I just thought that the cookie mix would be more dense. I am going to try this.

    1. I've made a few recipes from cake mixes but tend to stay away from them now due to the size of the mixes. Companies have "downsized" them and in my opinion the recipe doesn't come out right.
As mentioned this was the very first time I ever bought a cookie mix and I couldn't tell the difference when I did my taste test. They weren't dense and were chewy and really good.
      It's all in the baking

    1. This was the first "box" cookie I have ever made! I was suppose to pick up the cakemix but my hubby was with me. It's NOT un shopping with him and I wanted to get done. I didn't want to go back to the store so I made the cookies with the mix and they were good.
My husband took them to his friend and they wanted more :-)
I was at the party today- a little late but will see you again next monday.
