Michelle's Creole Oven Fries



 I've mentioned that Gabe loves  potatoes. A 50 pound bag has made the trip to Florida with us a few times. This year I'm going to repeat what he has been saying to me "Florida does have grocery stores"!

I'm always on the look out for new potato recipe and when I saw this one on Ms. enPlace , I  knew we both would love it. Michelle has a wonderful blog and I love recipes passed from Mother to daughter.

Michelle used Tony's Creole Seasoning. I alternate between Tony's and Slap Ya Mama. Both are excellent.

ingredients:

6 large potatoes ( about 2 pounds) peeled and cut into 1/2 inch pieces

1 teaspoon paprika ( used smoked paprika)

1 teaspoon chili powder

1 teaspoon Tony Creole seasoning ( used Slap Ya Mama- they have hot and mild, I used the hot)

1/4 cup olive oil*

salt and pepper ( didn't use)

Preheat oven to 400 degrees

Place the potatoes on a large pot and cover them with water.

Bring the water to a boil and cook until almost tender.

Mix the paprika, chili powder and Slap Ya Mama in a small bowl and mix well.**

Drain the potatoes.

Spread the potatoes on a large baking sheet and sprinkle the seasoning from the small bowl on to the potatoes. Toss with your hands to coat all the potatoes.

Drizzle with the olive oil and make sure all the potatoes are fully coated with the olive oil

Bake for minutes, turning every 10 minutes for 35-40 minutes.  They will be crisp on the outside.

**I did a few things different preparing the potatoes. I emptied the spice mix in a zip lock bag. Add the potatoes and shook. All covered in a matter of minutes.

* I used PAM Olive Oil spray. Sprayed the pan, added the potatoes and sprayed them on the pan. Did this every 10 minutes to make sure the potatoes were covered. 

They came out spicy with a nice crunch.

  1. I have to smile when I read your comment about the 50 pound bag of potatoes driving down to FL with you guys Linda-I'd say the SAME THING to Bob! Heck, not having that bag of potatoes in the truck would give you room for another plant-or a box of cookbooks! :)

    Those potatoes look so good-and I too am always looking for new recipes to make them. I love them crispy on the outside. Don't think I've ever tried Creole seasoning........I have Cajun seasoning though-that should work. And I'll do what you do and shake to coat in a bag-not that I mind doing it with my hands, but the bag would coat them quicker and more even too.

  2. OMG, this sounds sooooo sooooo good. I usually add the mixes in a bag also and shake it. This sounds like something I make with onion soup mix or some other seasoning mix. The potatoes come out so crispy and the middle is soft. My mouth is watering. I have that seasoning you sent me, so I am going to try this with that one. I can understand not using salt and pepper, the seasoning is very salty.

I got your email Friday and haven't had a chance to reply since work has been...well...work. I planned to make your chicken this week, but haven't had the chance (work!).       I love recipes that are passed from generation to generation and will be making this again.

  4. I love taters and this sounds like a winner. I can't find Slap ya Mama here but I know I can order it online. Love the photo, I just want to grab a big ol spoonful! I like the idea of using the ziplock. I do that with my fried chicken too.
