Strawberry Gazpacho

 
1 pound tomatoes, rinsed, cored and quartered
1 pound strawberries, rinsed and hulled
2 teaspoons strawberry-flavored balsamic vinegar (or regular balsamic)

Purée tomatoes, strawberries and balsamic vinegar in food processor. Refrigerate until cold, at least 2 hours.

  1. That looks SO good Linda......believe it or not I've never had gazpacho. I bet this would be WONDERFUL with heirloom tomatoes from the garden......Mmmmmmm.....I can't wait!
