Divingabe has asked me to make this so many times but I just never got around to it. I saw this Recipe and I could make it in my crockpot, knew it was on the menu.
This is SO easy and really good. It's also a frugal meal. I made my own stock and the only thing I would change -add more peppers. I would add a few red and green instead of just the one called for in the recipe.
1 pound red beans
7 cups water
1 green bell pepper, chopped
1 medium onion, chopped
3 celery stalks, chopped
3 garlic cloves, chopped or minced
2 cans Campbell's chicken broth
1-1/2 pounds sausage (I used Andouille)
2 tablespoons Creole Seasoning (I use Tony C's)
Hot cooked rice
Combine all ingredients except rice and cook in a Crock Pot on high for 7 hours.

Note to Self- Used 6 cups of chicken broth. Added cornstarch to thicken it up a bit. Added about cup and 1/2 rice to crockpot last hour of cooking.
Sounds good......I don't eat sausage, so I guess I could substitute chicken maybe. Love beans and rice.
ReplyDeleteLinda I make this at least once a year. I started when New Orleans was in the superbowl, right after Katrina. Before I always made Chili. We all loved this so much it has become a tradition. Good basic food.

I pre soaked my beans, so put setting to low and will cook all day. Hope it turns out, I love easy stuff like this.
