White Bean Pumpkin Hummus







I really like hummus and so does my friend Mary. I wanted to make her something special before we left and she loved it!

I saw this recipe on Meatloaf and Melodrama which I adapted slightly.

Ingredients:

1 15.5-ounce can cannellini beans, rinsed and drained
1 cup canned pumpkin puree
2 tablespoons olive oil
 2 cloves of garlic - minced
Juice from half a lemon
1/2 teaspoon ground nutmeg
1/2 teaspoon saigon cinnamon

Directions:

Add all of the ingredients to food processor, puree until smooth and creamy.

Remove to a small bowl.

Serve with pita chips, or raw veggies.


Cover and refrigerate leftovers

  1. I think I've had hummus once....it was store bought....Bob didn't care for it-he says because he's not a fan of chick peas. I swear it's the word "pea" that makes him think he doesn't like it. I'll call them garbanzo beans....maybe that will do the trick :) I can't remember if I liked it-and it's unfair to judge since it was pre packaged-homemade is so much better.

    I've been so tempted to try homemade but always seem to be missing an ingredient-mainly tahini. This recipe as stuff I usually have here-it looks like something I'd really enjoy.

    1. Mary buys hummus all the time and when she tired this she almost ate the whole dish! I'm sure if i was still there I know I would be making her hummus- LOL

      Wonder if Pedro was mad she didn't leave enough for him to try!

  2. Yummm.......this sounds so good. I do like hummus. It is great with pita chips and smeared on pita bread. Going to try this one.

  5. I didn't care for store brought either and then I tried an almond humus and boy was that fantastic. I think it had tomato and garlic in it. Homemade is so much better. Thanks for the recipe Linda, I have this one copied to try

    1. Mary was so funny. She was gonna share. She sat down and ate a little, got up and went back for more. You know what happens when you keep getting up. She finally put the dish on the table and finished it!

      Maybe she will send me a ticket to fly back home to make her more!

    1. I don't know if you saw my other comment. I made this for my friend before we left NY. She never made hummus and always buys it. She told me she was gonna save some for a friend and she ate the whole dish before I left.

Good Evening Linda, I used to live on the Greek Island of Cyprus so I absolutely love, love, love houmus and make it a lot, but I have never used pumpkin, which sounds like a lovely alternative. I will certainly be trying your recipe as I'm interested to see how the pumpkin changes the flavour of the homous.

      I made this for a friend. She never cooks and buys everything prepared. I wanted to make her something healthy and wow did she like it! At first she said she was gonna save some for her friend but she took out the crackers and that hummus was history!
