Richard Simmons' Poppy Seed Dressing

This recipe is a tried and true favorite. Love this dressing and have made it many times. I always get a request for the recipe or to borrow the cookbook.

It comes from Richard Simmons' Never Say Diet Cookbook which I bought in 1982.

Poppy Seed Dressing:

Note in cookbook from Richard "my way of outdoing the Neiman Marcus specialty".

Ingredients:

2 tablespoons dijon mustard
1 cup canola oil
1/3 to 1/2 cup red wine vinegar
2 tablespoon honey
2 tablespoons poppy seeds
1/4 cup grated red onion

Directions:

Combine mustard, oil, vinegar and honey in a blender. Mix well.
Remove the dressing from the blender. Pour into a medium size jar or a small bowl.

Stir in poppy seeds and onion.

Store in a 16 ounce jar. It will separate and when it does just give it a few good shakes.

Use the amount of dressing you prefer.

  2. It is pretty, love the color. It's so darned hot & humid here that salads have replaced most meals. Thanks for another great dressing. I love variety

  3. This looks so good. I love Poppy Seed dressing. Going to have to try this one. I can remember exercising with Richard also. He made me laugh with his outfits. Cyndy, I can't believe it is so humid in your neck of the woods. I thought you never got the humidity. It is horrid here. You walk outside, and you look like you just got out of the shower. Been eating lots of salads also. I have been on the bean salad kick...my bean salad goes in everything, salad, pasta.....etc.

    1. Northern California gets it worse than we do. All you want is something cold. Last night I wasn't hungry, so I ate a popsicle!

  5. This looks good , but the seeds Larry can't have. He finally paid for eating peppeers whole out of the jar. He had surgery to remove some polups yesterday. I know if I make this he would eat it. Some men never learn.

    1. Sue-

Can you still visualize Richard in those little short shorts- LOL! I had a few also but the VHS player doesn't work.

You can see how old my cookbook collection is. So far I think I have given away over 1,000 cookbooks. Our house in Florida is small and so I'm trying to find good homes for them.

    1. Maria-

I thought I posted at the party, will have to go back and check.

Richard was a hoot! He got you moving and I had quite a few of his cookbooks. This was the last one and now I can't find it. Not sure if I gave it away or if it's in Florida.

Hate that I have to give up my cookbook collection but I have no one to pass them to and I've been giving them away to people who love cookbooks as much as I do.

      Thanks for stopping by.
