Chocolate Peanut Butter Avocado Pudding
Need a healthy chocolate fix? This recipe from Minimalist Baker is going to tame that craving but will have you coming back for more.
It's easy and oh so good!
Ingredients:
1 1/2 ripe avocados
1 large ripe banana
1/2 cup unsweetened cocoa powder
1/2 cup creamy or crunchy peanut butter
1/2 cup maple syrup
1/4 cup almond milk
whipped cream for topping
Directions:
Cut avocado in half and remove pit. Scoop out the avocado and add to a food processor
Peel and cut banana into small chunks and place in food processor with the avocado.
Add the peanut butter, cocoa powder, maple syrup and almond milk to the avocado and banana and blend until smooth.
Adjust the sweetness to taste.
Place in serving dishes and chill a few hours or overnight.
Serve with a dollop of whipped cream

Ohhhhh I can't WAIT to try this......and I just grabbed a jar of salted caramel peanut butter too. Can I substitute regular milk for the almond milk in this? I don't buy almond milk.......but I will if I the recipe needs it.......
ReplyDeleteCarol- use regular milk. I'm sure it would come out great. This is now my go to treat. SO GOOD!

DeleteThis looks luscious. Carol.....you find the most different kinds of foods. Salted Caramel peanut butter.....wow, that sounds realllllyyyy good.

I tried a little the other day Myra-the Salted Caramel Peanut Butter (found it at Super Walmart)-it tasted more like peanut butter than salted caramel.....a LITTLE sweeter but not much. It's one of those limited edition things that all these food companies are doing now. I'll definitely be using it in cookies and stuff-oh and in that No-Bake Peanut Butter Granola Linda got us hooked on....that stuff ROCKS! :)
DeleteCarol, I was in Walmart the other day, and they had so many of those limited edition foods on the clearance shelf. All those different cake mixes and stuff. Guess lots of people would rather go for the regular tastes. I bet that peanut butter will be good in cookies. I also loved that Peanut Butter Granola.....yummmm
ReplyDeleteI see that too at Walmart and Target. I'm a limited edition girl and grab them off the clearance shelf-saves me money! What I REALLY hate is to fall in love with one of them and have it disappear never to return. I've learned my lesson-you like it? GRAB A BUNCH and if possible, in the freezer they go because you never may see them again. :)
DeleteThis sounds AWESOME! Being an American living in Australia, "puddings" are different. "Pudding" here is closer to cake. Soemtimes I want chocolate pudding, and now you've given me an answer to my dilemma.

OMGosh this sounds fantastic! I NEVER would have though avocado. I will definitely have to give this one a try but the true test will be when my chocolate loving kids try it!

Thank you for this! My diet is plant based and I don't consume ANYTHING from an animal so this is perfect! Pinned! I can also substitute the whipped cream with coconut milk (from a can). All you do is buy the full fat thai coconut milk, refrigerate it for 24 hours and use the waxy cream at the top... whip it with some powdered sugar (or agave) and a tsp of vanilla. BAM! SO GOOD!!

I can't taste the avocado at all Jess. It had a strong chocolate flavor and sweeten it to your taste. If you don't add more to sweeten it up, otherwise it may be a little bitter for you.

Well Linda.....I made it....we love it.....WE'RE HOOKED! It's DELICIOUS....so creamy and chocolatey. You'd never know the ingredients in this if you didn't see the recipe-all you know is you're eating some FANTASTIC pudding.
