Healthy Oatmeal Brownie Parfait
I recently made Brownie Batter Breakfast Bake. It's delicious.
Strawberries were on sale and Greek yogurt in the refrigerator.
Light bulb moment? You betcha.
Easy, easy, easy.
Make the Brownie Batter Breakfast Bake and leave it in the oven a little longer than the recipe calls for. You don't want the oatmeal to be soft in the center. Test it with a toothpick. The toothpick comes out clean- your oatmeal has the consistency of a brownie.
Once the "brownie" is baked remove from the ramekin and let cool.
Once cooled, break up the brownie into small pieces and drop into a parfait glass.
Layer sliced washed strawberries on top of the broken up brownie, using as many or as little as you want.
Next layer the Greek yogurt. I used vanilla yogurt. Spoon the yogurt on top of the brownie, strawberry layer.
Repeat.
Serve immediately and enjoy!!!!!!

This is another one I am going to copy. Going to make that Brownie Batter Breakfast, so I will make extra. I will probably replace the strawberries with some other fruit, since I don't eat them, but this is a keeper.

DeleteNow that's what I call breakfast-and a fun way to eat it in an ice cream sundae dish......I have some of those too. I just need to find which box they're in in the basement.
