Cheese Crisps

My honey LOVES cheese.  BJ's had a special cheddar from Cabot that he would try to sneak  while Rip was sleeping. Rip would hear the refrigerator open, shoot out of bed and be next to Gabe-drooling.

Max is a little garbage can. We don't give him much, tiny amounts of selective food but cheese? Come on, I'm not evil Gruella!

The recipe is easy and we both liked it. Gregory gave me Silicone Baking mats for Christmas and they came out perfect.

7 tbsp. butter, at room temperature
8 oz. Gruyere or cheddar cheese, shredded(used cheddar)
3.5 oz. all purpose flour (about 2/3 cup)
1/4 tsp. cayenne pepper( Added a bit more)
1/4 tsp. salt
1 cup crispy rice cereal






  1. Preheat the oven to 350 degrees F.
  2. Beat together the butter and cheese until combined. Add the flour, cayenne, and salt and beat until you get a crumbly dough. Add the rice cereal and I mixed by hand(don't over beat or you might break up the rice crisps).
  3.  Portion out 1 tbsp amounts of dough, and place onto a sheet pan (it will look like a pile of rubble). Use bottom of a glass  and compact it down. Bake for about 15 minutes, until lightly browned

  1. o my, these look so yummy, I am a huge cheese lover also, and tho I try not to overdo, I do at times. I am going to have to try this one. In fact I am putting the ingredients I need on my shopping list.

  5. Just wanted to tell you I made these today, and they are really good. They reminded me of how my family used to fight over the cheese that came off of food that had melted cheese on it. Everyone would try to get to the stove first to scrape the cheese that had dripped and got hard like the cheese crisps did. Yummy yummy, I will have to hide them, so I don't eat them all.
