Cauliflower Carrot Mexican Mash
The recipe for the cauliflower carrot herb mash is HERE
This recipe was for one serving.
Ingredients:
1/4 cup cauliflower carrot herb mash
1/4 cup low sodium black beans- rinsed and drained
2 teaspoons Thai Chili Garlic Paste
1/4 cup chopped turkey
1 red pepper
Directions:
Preheat oven to 350 degrees
Wash and dry the pepper and cut in half and remove seeds
Place each half of the pepper in baking dish with a small amount of water in the bottom of the dish and cover with aluminium foil.
Bake the pepper until fork tender, about 10 minutes at 350 degrees.
In a medium size bowl add the cauliflower/carrot mixture, black beans, Thai chili garlic paste, turkey and mix well.
The Thai chili paste can be adjusted to taste.
Once the pepper is tender carefully remove from the dish and add the filling.
Place the pepper back in a prepared baking dish and bake at 350 for 10- 15 minutes. The cooking time will depend on how much filling you add to the pepper.
