Blueberry and Mandarin Orange Salad
This recipe is adapted from Georgia Blueberries . Not sure where the blueberries I bought on sale are from but I know that when we move to Florida I'm looking forward to the Wellborn Blueberry Festival which is held in June.
I didn't have a red onion and since it is a Georgia recipe I subbed a Vidalia onion.
All my pecans are in Florida so I subbed chickpeas to the salad.
Ingredients:
1 head lettuce - I used a bag of mixed greens
1/2 cup blueberries
½ cup mandarin orange segments
1/2 cup chickpeas- rinsed
Vidalia onion- cut into rings
Blueberry Vinaigrette:
1 cup Georgia blueberries
¼ cup balsamic vinegar
¼ cup olive oil
2 Tbl. juice from 11 oz. mandarin orange can
Place blueberries, balsamic vinegar and juice from the mandarin can into blender. Blend until smooth, streaming in the olive oil while the blender is running. Continue blending until emulsified.
Note- this is a tart dressing. If you like sweeter add sugar or sugar substitute to taste.
Directions:
Chop lettuce. Mix with blueberries, orange segments, onions and chickpeas.
Pour vinaigrette over salad and toss.

What a pretty salad-and delicious looking too. I love adding fruit to salads...it does something magical...at least I think so. :)

Blueberry picking has begun in Robin's town....so I know what I'll be doing in the not too distant future. I do LOVE blueberries in all kinds of dishes...both savory and sweet.

DeleteBlueberries are plentiful here right now and I think your salad is beautiful. I don't think I'd add anything to the dressing as it sounds perfect as is. while I love sweet, it's not always a good thing. Healthy salad needs a healthy dressing, I'd leave the sugar out. this looks Perfect!

DeleteYou had me at blueberry! This salad looks pretty darn delicious. When we lived in Florida (panhandle), I always marked my calendar for the blueberry festival in Brewton, AL. Was one of my favorite days of the year. :)

I only recently started adding blueberries to my salads. We already love mandarin oranges on salads so perfect pairing. Think the balsamic will put this from okay to wow! Visiting from Home & Garden Thursday. Linda
