Brownie Batter Breakfast Bake
I found this recipe on Running With Spoons....because you can't eat with scissors.
This is not sweet. It's full of fiber and a delicious way to start the day.
⅓ cup rolled oats
2 Tbsp. flour of choice( I used graham flour)
1 Tbsp. unsweetened cocoa powder
1/4 tsp. baking powder
pinch of salt
⅓ cup almond milk
1/2 - 1 Tbsp. maple syrup, to taste
1 tsp. coconut oil, melted ( used peanut oil)
1/2 tsp. vanilla flavor ( used Watkins Caramel Extract)
1 - 2 Tbsp. dairy-free chocolate chips ( didn't use)
Preheat oven to 325 degrees
Spray or lightly coat an oven proof bowl or an individual ramekin with nonstick cooking spray- set aside
Mix together the oats, flour, cocoa powder, baking powder, and salt. Add almond milk, maple syrup, peanut oil, and vanilla, mixing until well combined in a medium size bowl.
Fold in the chips and set a few aside for the top.
Add the batter to the ramekin or oven proof bowl. Sprinkle a few of the chips over the top if desired.
Bake for 15- 20 minutes at 325 or until the oatmeal consistency you want.
Remove and allow to cool for 5 minutes.

Note: I made this a few times. I baked it longer so it had the consistency of a brownie. Test it with a toothpick. It's really good and nice healthy breakfast.
