Easy~ Spicy Ranch Chicken





This recipe is from  Carolyn Blurton of Madison County.  The Jackson Sun printed this recipe and it was also included in the Jacksons Womens Club collection of recipes.

It's easy. I used a whole chicken which I cut up and Mexican blend cheese. I bet you know I used my favorite- Slap Ya Mama to coat the chicken.


Ingredients:

 6 chicken breast halves (boneless and skinless) coated well in Cajun seasoning ( used a cut up whole chicken)



1 16 ounce bottle original ranch dressing
1 cup mild cheddar cheese(  used Mexican blend cheese)
1 pkg. real bacon pieces ( fried up 6 slices of bacon)

Directions:

Preheat oven to 350 degrees

Prepare a baking dish with cooking spray.

Coat the chicken with your choice of Cajun spice. I didn't measure how much spice I added to the bag to coat the chicken.  I poured some in and when it was gone I added more to make sure all the chicken parts were covered.

Bake in the preheated oven for 35 minutes or until chicken reaches the internal temp of 180 degrees. I did not debone any parts of the chicken.

In a medium size bowl combine the ranch dressing, cheese and bacon bits.

Take the cooked chicken out of the oven and cover the chicken with the ranch mixture.

Put back in the oven until hot and bubbly.

Note:  As mentioned I used Slap Ya Mama. It was VERY hot. Next time I'll just sprinkle it on the chicken. It was good and a make again recipe.

  1. This sounds just right for me. I have tried that Slap Ya mama, and wooo wooo, you gotta be careful with her. She is a real hot mama for sure. Will take your advice and just sprinkle. This recipe has all the ingredients I love, so this is one for me. Thanks Linda, sure could use some heat here in a warm weather way. Gonna snow all day, and that is much too much for me.

    1. I have two containers. One is HOT and the other is the original . I pulled it out and didn't look and was VERY heavy handed with it and WOW- talk about spicy!

      Yes, sprinkle it on. Otherwise the heat from it would make that snow disappear!

  2. That looks great Linda! Easy too-I like that.

    Afraid we'll have to be wimps and go with a milder seasoning on the chicken......we love hot but we can't eat it like we used to any more, darn it.

    You know me, I'm always up for a new chicken recipe to try. :)

  3. This sounds delicious and I bet it tastes good too. We love chicken in our family, maybe I will use a cajun marinade.

    1. Angela- I don't think you can get Slap ya mama in Canada unless you amazon has it. I can't buy it at home!

      When we visit Gabe's parents this summer I can bring a container up with us and mail one to you.
