Mama Dip's Creole Chicken Thighs




When we sell our home in NY Gabe and I would love to buy a RV and travel. I love pinning places to visit and enjoy a good meal. Mama Dips is suppose to have fantastic fried chicken.  She also has a cookbook! 

I've been giving away my cookbook collection. I took out Mama Dip's Family Cookbook from our local library. 

Ingredients:

6-8 chicken thighs

1/2 cup vegetable oil or margarine

3/4 cup sliced and quartered onions

1 tablespoon flour

1 15 ounce can crushed tomatoes

1 8 ounce tomato sauce


2 teaspoon garlic salt

2 teaspoons cajun seasoning

1/2 teaspoon dried thyme

1 teaspoon hot sauce

Directions:

Wash chicken & pat dry.

Heat oil in a large skillet over medium heat, add chicken browning both sides

Remove thighs from skillet and set aside.

 Pour off all but 3 tablespoons of the oil from the skillet.

Add onion to the skillet and cook, stirring for about 4 minutes.

Stir in the flour.

Mix in the tomatoes, tomato sauce, garlic salt, cajun seasoning, thyme and hot sauce.

Add browned chicken to the skillet. Reduce heat and simmer for 30 minutes.

  1. Interesting recipe. Wonder if you could use chicken breasts instead.
