Ritz Chicken Casserole



My Aunt Alice's recipe. 

Ingredients:

4 boneless skinless chicken breasts, boiled and cubed
1 cup sour cream
1 (10 3/4 ounce) can cream of chicken soup (mushroom can be substituted)
25 Ritz crackers
1⁄2 cup butter, melted

salt and pepper

Directions:

Preheat oven to 350°F.
Boil chicken breast until tender; drain and cube.
Spread evenly over the bottom of a square casserole dish.
Salt and pepper to taste.
Mix sour cream and chicken soup in a separate bowl.
Spread the sour cream and soup mixture over the chicken in the casserole dish.
Crush the Ritz crackers and spread over top of the casserole.
Spoon melted butter on top over all.

Bake in a 350°F oven until top is golden brown, approximately 20-30 minutes.

  1. I thought I left a message on here yesterday. I make this also, but my recipe is a bit different. It is my granddaughter's favorite recipe. Yum.

    2. I shred the chicken. And also use cream of chicken soup, and the recipe calls for adding some of the cooking water to the soup mixture. And then the butter gets mixed in with the crumbs instead of putting the crackers on and then adding the butter. No matter how you make it, it is a winner.

    1. You know Helen, I've been making healthy meals but hubby really isn't into them. This one from Aunt Alice he loves. SO easy.

      At first I was going to make my own cream of mushroom soup then I thought forget about it and just go with Aunt Alice's recipe.
