SPICY KALE AND QUINOA BLACK BEAN SALAD



I mixed kale with other greens from my garden. My cilantro is thriving. I've grown cilantro for years and never had such a healthy plant. I picked up a small pot in Trader Joe's and as you can see by the bottom photo it's doing great.

The recipe is adapted from The Growing Fridge.

Ingredients:

1 cup quinoa, uncooked
6 cups chopped kale, de-stemmed
1/2 red onion, chopped
1 can black beans, drained and rinsed
1 cup corn

SPICY DRESSING
1/4 cup fresh cilantro, chopped
1 clove garlic, minced
1/4 cup fresh lime juice (about 2 limes)
1/4 cup hot sauce of your choice 
1/4 cup water
1 teaspoon maple syrup
1/2 teaspoon cumin ( didn't use)

sea salt and pepper, to taste

Directions:

Place 1 cup quinoa in a fine mesh strainer, rinse a few times. Combine 2 cups of water or chicken both in a medium sized pot.
Add 1 cup quinoa and bring to a boil. Lower heat, cover and simmer for 15 minutes or until liquid is absorbed and quinoa is
fluffy.



 Add the kale, onion, corn, beans and quinoa to a large salad bowl. Mix well.



Prepare the dressing. Pour the dressing over the salad, mix and enjoy!!!

  1. This looks so good!!!! I need to make this. I don't have kale, but I guess I could use spinach. The dressing sounds like my kind of taste. Thanks Linda, I have been looking for dressing that is not high in sugar. Yum.

  2. Oh my goodness-your cilantro looks FANTASTIC Linda! I've tried growing it a few times and never could get it to do anything at all except stay puny and go to seed. I'm jealous! I can't wait to see lots of green lush plants growing in my garden. Times like this when I look outside and see snow covering everything, that time seems like eons away. :)

    1. I know! I never grew cilantro that lasted. Trader Joe's for me next time I buy more.
