Buffalo Chicken Deviled Eggs



This recipe is from Closet Cooking. Not only would be great little appetizer but you could also sub any leftover turkey for the chicken.

Ingredients:

6 eggs, boiled, cooled, peeled, and cut in half
1 tablespoon mayonnaise or ranch dressing or Greek yogurt ( I  used Greek yogurt)
2 tablespoons buffalo wing hot sauce
1/4 cup chicken, finely shredded or diced ( great for leftover turkey also)
2 tablespoons carrot, finely diced
2 tablespoons celery, finely diced
1 tablespoon onion, finely diced

2 tablespoons blue cheese, finely crumbled
hot smoked paprika ( optional) 

Directions:

 Mash the scooped out yolks from the egg halves and mix with the Greek yogurt, hot sauce, chicken, carrot, celery, onion and blue cheese.


Place a tablespoon of the mixture back into the holes left by the yolks in the eggs and serve garnished. 

I sprinkled a bit of hot smoked paprika on each egg.

I'm not crazy about deviled eggs but these are really good.

  1. I can't say much since I don't eat eggs, but I will share this one. Eggs and me just don't mesh. I can't even look at them cooked.

  6. My son Richard loved deviled eggs. He was dissapointed in me one year at thanksgiving when I forgot to make them . He would love these.I would love to try these . In me memory of him..
