Honey Dijon Chicken





The recipe is from Simply Stacie

I adapted the recipe slightly and used smoked paprika.

Ingredients:

4 boneless, skinless chicken breasts
3 tbsp Dijon mustard
3 tbsp honey
2 tbsp extra virgin olive oil
1½ tsp curry powder
1½ tsp smoked paprika

Directions:

Preheat oven to 375 degrees F

Prepare a baking dish with non stick spray or if you want line the dish with aluminium foil- easy clean up.

Add the dijon, honey, curry and smoked paprika to a small bowl and mix until well combined.

Brush both sides of the chicken with the mixture.

Bake for 30 - 45 minutes until chicken is cooked to the internal temp of 165 degrees.

I served this with Cucumber Mango Salad
