Sweet & Spicy Kale Strawberry Jalapeno Salsa


Gabe would be the first person to tell you I can not resist a sale. I'm not into clothing or shoes but put me in a grocery store and something is on sale, I'm a moth to a flame.

Strawberries were in sale and I wanted to make something for Cinco de Mayo. I love salsa and wanted to do something different.

I used the dressing from Strawberry Wonton Cups, which gave it a slightly sweet taste.  I didn't have cilantro in the garden but still had Spicy Baked Kale Chips in a bag. Great combination!!

No need to source it, I made it up. Hope you enjoy it as much as I did.


Ingredients:

2 cups washed and sliced strawberries

1/4 cup red onion- diced

1 jalapeno pepper- washed, seeds removed, diced

2 tablespoons balsamic vinegar

1 tablespoon sugar

Crushed kale chips

Directions:

Add sliced strawberries, onion and jalapeno to a medium size bowl.

Mix balsamic vinegar and sugar and pour over the strawberries,onion and jalapeno.

Serve immediately and sprinkle with crushed kale chips or cover and refrigerate strawberry mixture until ready to serve.

    1. Yeah, I love using up anything leftover and love food circulars. You should see the way I study them. When I had coupons I would save a lot.
