Strawberry Chia Seed Jam- 3 ingredients




Strawberry season brings out the recipe detective in me. I love my cookbooks  but heard about this recipe from one of the ladies who attends yoga with me. No idea where she got the recipe but she makes it all the time and loves it.

It was easy to remember- 3 ingredients!


Ingredients:

2 cups strawberries- washed, tops removed. Berries should be a room temp. 

2 tablespoons honey or maple syrup

2 tablespoons chia seeds


Directions:

Place strawberries and honey/maple syrup in a saucepan and mash them until they are the consistency of coarse apple sauce. Cook over medium heat for 10 minutes, then remove from heat and stir in the chia seeds. Place jam in refrigerator for at least one hour to thicken, then serve.

This jam doesn’t contain any preservatives so either use within a few days or freeze it.

Note: she has grandchildren that are picky about jam texture.   She grinds the chia seeds first then tosses the whole batch in the blender in the end to make it really smooth.  It's more of a strawberry ‘spread’ than jam . She also adds a scoop of Vital Proteins gelatin. Good way to sneak it into food.

  1. I remember seeing the blueberry chia seed jam you made last summer was it? and wanted to make it but it was a bad year for blueberries here so we didn't go picking. The strawberries will be plentiful in the stores soon so I'll be trying this one for sure. I did make a jam with chia seeds in it with peaches last year but it was too cinnamon-y for me.....I want to taste the fruit. This looks delicious, Linda. Since I'm not a canner and don't care of the copious amounts of sugar in homemade jam, this looks like something we'd like.

  2. This looks very pretty. I am sure those who love strawberries will go for this. I am not a strawberry lover, so I will pass this on to others. Anything with Cherries is for me.
