PICKLED CHERRY TOMATOES


I love cherry tomatoes and was lucky to be able to grow my own. They did great until we had a hard frost, bye- bye plant.

Since I missed snacking on them I picked up a few containers at our local produce store. I wanted to do something different.  Pickled Plum had just the recipe to try.

Caroline used a Thai pepper. I brought my jalapeno plant from NY to Florida and it hasn't stopping producing peppers. I picked off 3 red jalapeno and included the seeds.

Ingredients:

30 or so grape tomatoes ( depends on the size of the tomatoes in a plastic carton)

3 tablespoons fish sauce

6 tablespoons rice vinegar

1/2 teaspoon sugar

3  small red jalapeno pepper with seeds 

Directions:

1- Finely chop jalapenos and set aside ( I always use plastic gloves when chopping jalapenos)

2-Mix all the ingredients for the marinade in a bowl.

3-Prick the tomatoes a few times using toothpick or fork.

4- Place tomatoes in a plastic container. Pour marinade ,add the jalapenos.



 5- Refrigerate for at least a day before eating and for no longer than 4 days.

  1. What a bright sunny picture....I can't wait to see green grass instead of the white stuff on the ground right now.

    I still haven't gotten brave enough to try fish sauce....I have a small bottle in the cupboard waiting for me to give it a try.

    I bet your jalapeno plant is lovin' the FL heat huh?

    1. I forgot to bring in the plant when we had a frost. It looked like it was dead. I cut it back and fed it and now it looks great! I would love to find someone to take it for the summer and enjoy the peppers.

  2. Yum, this sounds so good. You know I love cherry tomatoes, and my favorite recipe is the roasted ones you posted. This sounds great, and I am going to try it. What could you use instead of fish sauce. This doesn't sound like something I would buy.

  3. Like the jalapeno peppers in there. that would be a very nice taste. i'm with Myra though. not sure about the fish sauce. might have to cut that down. my guess is that it adds flavor. can you just leave it out or do you think it would make the taste better?

  7. This is something Larry would like. I never seen Fish sauce in the store. I will have to look for it. My S.I.L. makes great Hot green tomato's She give Larry A Quart jar every year. He has them gone in a couple of days. I will try this for him. Just hope I can find the fish sauce..

    1. I loved the marinate. You can use it on so many different things. It's not a strong pickle taste.
