Pumpkin Cornbread



A tasty addition to a holiday meal. Recipe adapted from
Sweet Pea's Kitchen


Ingredients:

1 cup all purpose flour
1 tablespoon baking powder
1 teaspoon kosher salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup light brown sugar
1 cup cornmeal
2 large eggs
1 cup pumpkin puree
1/4 cup canola oil
1 tablespoon molasses

Directions:

Grease an 8 x 8 baking dish and set aside.

Preheat oven to 400 degrees

Whisk flour, baking powder, salt, spices, brown sugar and the cornmeal together until thoroughly  blended in a medium size bowl.  Set aside.

Use an electric mixer with an paddle attachment to beat the eggs. Stir in pumpkin, oil and molasses.

Add the wet ingredients to the dry, stirring until just combined.

Pour into the prepared dish and bake 25- 30 minutes.

you know I had to do a taste test and cut a slice when it came out of the oven. Added butter and it is really good.

  2. I have a good stash of pumpkin and lately always seem to find recipes that only use part of the can...which means I always have leftover.to use up. I'm definitely saving this one.....we love soup and chili through the winter and this would be a great sidekick.

    1. You know what Rose, I would never think to add pumpkin to cornbread, it's something I just wouldn't think of. I helped out at a senior lunch and told an older lady about it. She said they make it all the time!

      We are in Florida now and this would not be a staple for Thanksgiving in NY!

  6. I love pumpkin anything so this cornbread is a must try for me! How perfectly fall! I bet it's delicious with a big bowl of chili and also would make a Thanksgiving stuffing or dressing loads more flavorful. YUM!
