Cuban Black Beans Arnaz






Oh Babalu ! This recipe doesn't need any good luck to be good, it's a winner in my book!

The recipe is from one of my old Gourmet magazines ~ this was a favorite of Desi Arnaz.

Gabe had it with rice and I ate it without the rice.

I adapted the recipe. I used chicken broth in place of the water and cooked it in my crock pot instead of on the stove.

Ingredients:

1 lb. dried black beans, rinsed and picked over
1-1/2 cups chopped onion
2 garlic cloves, crushed
2 Tbsp. honey
1 large green bell pepper, chopped
1 smoked ham hock or ham bone ( I used a ham bone)
4 cups chicken broth ( I always make my own broth and it's sodium free)

Directions:

In a large pot cover beans with water and let them soak overnight.

if you want to speed up the process you can combine the beans with enough water  and cover them by two inches  and bring the water to  a boil.  Boil the beans for 2 minutes. After the beans have boiled let them stand  in the covered pot for about an hour.


Drain the beans and add to the slow cooker and add 4 cups chicken broth, the onion, garlic, honey, bell pepper and the ham bone.

Cook on high for 4-5 hours.

    I channel Lucille Ball SO many days here-I swear she's taken me over--a sitcom in the making.....funny and scary all at the same time. Don't think Bob hasn't wanted to whip out Desi's famous line above MORE than once when he sees some of the stuff I get myself into. HAHAHAH.

    And WHY am I not surprised you had your serving of those delicious beans WITHOUT rice? :)

  2. And I would be Ethel to Carol's Lucy. I love black beans and just happen to have a nice big Ham hock sitting in my freezer. I think i'd do without the rice too. now I have to check my pantry for the black beans. Thanks!

    1. That's why I made this Cyndy. I had a ham bone in the freezer and I wanted to get it out and into something.
      This is really good, crappy photo but the recipe is delicious.

  12. This looks so yummy. I especially like the fact that I can use my crock pot. My husband and I ate at a Cuban restaurant in Vegas. It was a little family run place with a lot of charm and the best food of the whole trip !!!! We love the recipes with a little zing in them and this looks like a keeper. Thanks for sharing.
