Killer Marinated Tomatoes



Sorting through my cookbooks, what to give away and what to keep. This was in a community cookbook- Cooking by the 'Sea. I found other recipes I want to make so it will be going to Florida with us.

Ingredients:

3 Tablespoons Fresh Parsley, Chopped
2 Tablespoons Fresh Basil, Chopped
1 Tablespoon Granulated Sugar
1-½ teaspoon Garlic Salt
1-½ teaspoon Seasoned Salt
¾ teaspoons Dried Thyme
½ teaspoons Ground Black Pepper
¾ cups Canola Oil
½ cups Red Wine Vinegar
3 whole Scallions, Sliced
6 whole Tomatoes, Cut Into Wedges

Directions:

Whisk together all the ingredients in a large bowl except the tomato wedges.

 Add the tomatoes and toss to coat.

 Allow to marinate at room temperature for a couple of hours, stirring occasionally .

  2. Yum.....these look so good. I am always looking for different marinades for tomatoes. Going to keep this on hand, and next time I get a load of tomatoes will try it out. I love the way you plated them, the dish is beautiful.

  3. Yum! I love marinated tomatoes. Our plants didn't do that well this year, so I never go around to making some. These look amazing so now I really wish I had!
