Spicy Asian Zucchini



 I love cooking with zucchini. When I  have a garden  in Florida, I'll have TONS of recipes to share with you but for now I buy all my zucchini. Carol's garden is exploding with zucchini and she is going to post a few of her favorite recipes soon on the blog.


The recipe is from Neighbor Food and it's a make again. Easy and loved it.

Ingredients:

1 large or two small zucchini-cut into long strips

 2 teaspoons sesame oil
1/4 cup soy sauce (Tamari if gluten free)
2 Tablespoons sriracha sauce
1 teaspoon honey
2 Tablespoons sesame seeds ( I like to toast mine)*
2 green onions, sliced ( didn't use)
Salt
Pepper

Directions:

 In a large skillet heat 2 teaspoons of sesame oil over medium high heat.

 Add  zucchini ( saute them in batches depending on the size of your skillet and how much zucchini you have).

 Season with salt and pepper and saute until browned . Remove from heat and set aside. Repeat with remaining zucchini if needed.

Whisk together the soy sauce, sriracha, and honey in a small bowl. Pour the mixture over the sauteed zucchini. Depending on how much zucchini you cooked you may not need to use all the sauce. Toss to combine.

 To serve:

 Sprinkle the zucchini with sesame seeds and green onions. 

* To toast sesame seeds:

In a medium size dry skillet heat for 3-5 minutes.
                          OR
Bake on a ungreased cookie sheet at 350 degrees for 8-10 minutes. At 5 minutes or so toss the seeds to make sure all of them brown.

  1. Zucchini exploding from the garden is right! Good gravy I think I could supply the town? I REALLY want the weather to cool down so I can start my new zucchini bread ideas....hopefully soon.

    That really looks good Linda...definitely not something I would have thought of pairing together-zucchini and Asian flavors....but then again why not? Zucchini is a blank palate that takes on whatever taste you introduce to it.

    This year I'm definitely on the hunt for new ideas to use this squash...I'm keeping this one for sure-will pair it up with a Chinese theme night.

  3. OH this looks good. I must try if I ever get any zucchini...yes I have a really hard time getting them to produce fruit. The plants are big and robust but the fruit withers....I am looking forward to all the recipes though....hope springs eternal. I once made Zucchini parmesan only I used a homemade crab bisque for the sauce. I pankoed the zucchine and gently fried them first before layering them. As I recall it was nummy.

  14. Looks fantastic. Sadly, I am the only gardener in the world who can't grow zucchini! I can grow everything else, but zucchini eludes me! It pains me to do it, but I have to buy my zucchini in the summer and I will purchase some to try your recipe. Thanks for sharing.

    1. I wonder why your zucchini won't grow? I can't grow it in NY due to the deer in our area. We don't have a fenced in yard ( which really wouldn't do much good anyway) and the deer eat just about anything in our yard.
