Rum Island Thighs




Found this recipe in my stack of recipes that I've had for years.  It came from Newsday, which is a Long Island newspaper.

Ingredients:

6 chicken thighs

Marinade:
4 tablespoons fresh lime juice, strained
2 tablespoons fresh lemon juice, strained
2 tablespoons reduced sodium soy sauce
1 tablespoon Worcestershire sauce
1 1/2 tablespoons brown sugar
1 teaspoon lime zest
1/2 teaspoon minced garlic, about 1 clove
Pinch cayenne pepper
2 tablespoons rum*
1 1/2 tablespoons peanut oil
2 tablespoons chopped fresh cilantro
2 tablespoons butter or olive oil spread


Directions:

Place chicken thighs in non-metallic dish or resealable plastic bag. Set aside.

To make marinade, place juices, soy sauce, Worcestershire, sugar, zest, garlic and cayenne in sauce pan over medium heat. Stir to combine. Heat and stir 4 to 5 minutes or until sugar has dissolved. Remove from heat and whisk in rum and oil. Set aside to cool. When cool, stir in cilantro and pour mixture over thighs. Cover or seal bag and refrigerate 2 to 3 hours, or overnight. Turn chicken occasionally while marinating.

 Preheat grill and lightly coat grill rack with oil or cooking spray. Remove chicken from marinade and place marinade in sauce pan. Heat marinade to boiling, reduce heat and add butter. Simmer 5 minutes. Divide sauce, reserving half for basting chicken when grilling and half for serving. Place chicken on prepared grill 4 to 6 inches from heat source. Grill over medium heat 8 to 10 minutes, turning and basting often. Continue grilling an additional 8 to 10 minutes without basting, until glazed and chicken reaches 170° F on meat thermometer. Juices should run clear when chicken is pierced with fork. 

Discard any remaining basting sauce.

* If you don't have a Rum you can substitute-  Water, white grape juice, pineapple juice, apple juice or apple cider, or syrup flavored with almond extract. Substitute equal amounts of liquid.

  1. This looks Good Linda. One I will try. I have everything but the rum. I might even buy a pint just for this. I hear its good with coke. After reading about Max I could use a small glass.

  2. I love this and will have to give it a try too. They look so darned good.

    Dottie, if you don't want that much rum, they have the mini bottles too at some stores and it would be just a little over 2 tablespoons.

  3. This sounds so good. I have some rum I have had here for years, might be a good way to use it up. I really love the ingredients in the marinade. Going to try this one soon.

  7. This looks so good, I will have to try them and any excuse to get rum works for me! My preference is Captain Morgen., which makes lovely summer "boat drinks". I was playing around with a white cake mix and added so me rum and orange grand something it was tasty

    2. Hi Linda, stopping back to let you know that we made this Rum Island chicken this weekend and it was so good! We are up at our lake house in Grand Isle, VT and I didn't have access to all of the ingredients here on the island, but it was still delicious with the substitutions that I made i.e. chicken breasts instead of thighs, olive oil instead of peanut and ground coriander instead of fresh cilantro. Thanks again for the recipe!
