Skinny Cheesecake Oatmeal



Memorial Day weekend sure didn't start off warm. Waking up to temps in the 40's isn't something I'm use to. I wanted something nice and hot and this recipe fit the bill.

Sharon and Marie, my friends in Florida told me it's very hot there. Wonder when that hot weather will hit the New York area. My beach chair is waiting .


Found the recipe on Amy's Healthy Baking.

Ingredients:

1/3 c old-fashioned oats
2/3 c skim milk
1 1/2 teaspoons sugar-free, fat-free cheesecake instant pudding mix

Directions:

 Add oats, milk, and pudding mix to a small pot and cook for 4-5 minutes over low heat, stirring frequently, on the stove.

  2. Well let me stand on my podium and give this recipe 2 thumbs up! I made mine as overnight oatmeal-in other words I mixed it up the night before, covered the container and let it sit in the refrigerator all night. The oatmeal softens just like it would when you cook it....you eat it cold. Is it ever DELICIOUS. I used sugar-free white chocolate pudding mix since I was out of cheesecake flavor and added a little double strength cheesecake oil to give it that nice taste. Bob weighed the pudding mix and divided it into 4 little cups so I made 4 servings of this to have breakfast ready for 4 days. He even liked it and he's a fuss budget when it comes to eating anything that looks like it has milk in it. He topped his with some fresh blackberries...he said it was delicious.

  4. My Goodness, this looks so tasty. I have never heard of eating oatmeal cold, but it might appeal to me more that hot. I am putting this one on my list to make. I love Cheesecake and I do like Oatmeal in things other than cereal, so this might be one for me to try. Must be fun to try all the different flavors of pudding mix...Boy what ideas you girls give me.

  5. Yesmam it is still hot. Went to auction Memorial day. They were real proud of their items. Prices too high real nice furniture and sterling pieces. Ready for fall

    1. I was kind of concern when I put this recipe up. Warmer weather is here and wasn't sure how many people eat hot oatmeal in the morning. I like oatmeal year round but took a chance that others enjoy it as much as I do.
